Whipped Ricotta Dip

Ingredients

  • 15 oz ricotta cheese (I used whole milk ricotta cheese)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ¼ tsp salt
  • drizzle of olive oil for garnish (optional)
  • dippers such as cucumber slices, carrots, bread (optional)

Preparation

  1. In a food processor, combine the ricotta cheese, lemon juice, olive oil, and salt. Process for about 90 seconds, or until smooth. 
  2. Transfer to a serving bowl. I like to add a drizzle of olive oil and serve with cucumber slices. You can also serve with carrots, bread, and other dippers of your choice. Store any leftovers in an airtight container in the fridge for up to 4 days.
