Spinach Artichoke Bagels

Ingredients
- 2 GF paleo everything bagels
- 8 oz cream cheese
- ⅔ + ⅓ cup shredded mozzarella
- ½ cup Parmesan, grated
- ½ cup spinach, finely chopped
- ½ cup artichoke tapenade or finely chopped artichoke hearts
- salt & pepper to taste
- 1 tbsp parsley, chopped
Preparation
- Preheat oven to 350 degrees.
- Line a baking sheet with parchment paper.
- In a medium to large bowl, combine the cream cheese, ⅔ cup mozzarella, parmesan, spinach, artichoke, and salt & pepper. Stir to combine.
- Cut the bagels into halves, and place them side up on the baking sheet.
- Generously spread the spinach artichoke mixture on the bagel halves.
- Sprinkle ⅓ cup mozzarella on bagels.
- Bake bagels for about 10-12 minutes, or until cheese is melted.
- Sprinkle parsley on top of spinach artichoke bagels.
