Ingredients
- 2 cups of Otto's Cassava Flour
- ½ cup softened butter
- ¾ cup coconut sugar
- 2 eggs
- 1 cup cashew milk
- ½ tsp salt
- 2 tsp baking powder
- 1 tsp vanilla extract
- few drops of water if needed
- paleo vanilla & chocolate frosting from Simple Mills or make your own
- rainbow sprinkles
Preparation
- Preheat oven to 375 degrees, and line cupcake liners in a muffin pan
- Makes about 18 cupcakes
- Mix butter and sugar in a bowl and then mix in eggs
- Add flour, baking powder, and salt
- Add milk and then vanilla
- Stir well, and divide evenly between 18 cupcake liners
- Bake for 18-20 minutes
- Cool the cupcakes and then transfer to a wire rack
- Frost the cupcakes with vanilla & chocolate frosting and sprinkles.
