Hidden Carrot Mac & Cheese

Ingredients
- 1 cup carrots
- 3 tbsp milk (I use almond milk)
- 6 cups water
- 1 box of Jovial 6 oz white cheddar mac & cheese
OR
- 2 cup carrots
- 6 tbsp milk (I use almond milk)
- 3 quarts water
- 1 box of Jovial 12 oz elbows (or other pasta type)
- 1.5 cup cheese (I use shredded cheddar or mozzarella)
Preparation
- Steam carrots in a food steamer or cook them in a pot. Add cooked carrots to a blender, and blend. Add milk until it reaches a smooth puree - I add 3-6 tbsp of almond milk.
- Boil water in a pan. Stir in pasta and cook for 8-9 minutes until done, stirring occasionally.
- Drain pasta in a colander. While pasta is draining, add carrot puree to warm pan. Add cheese, and stir to combine.
- Add cooked pasta. Stir well. Can add grated parmesan on top. Enjoy!
