Hidden Carrot Mac & Cheese

Ingredients

  • 1 cup carrots
  • 3 tbsp milk (I use almond milk)
  • 6 cups water
  • 1 box of Jovial 6 oz white cheddar mac & cheese

OR

  • 2 cup carrots
  • 6 tbsp milk (I use almond milk)
  • 3 quarts water
  • 1 box of Jovial 12 oz elbows (or other pasta type)
  • 1.5 cup cheese (I use shredded cheddar or mozzarella)

Preparation

  1. Steam carrots in a food steamer or cook them in a pot. Add cooked carrots to a blender, and blend. Add milk until it reaches a smooth puree - I add 3-6 tbsp of almond milk. 
  2. Boil water in a pan. Stir in pasta and cook for 8-9 minutes until done, stirring occasionally. 
  3. Drain pasta in a colander. While pasta is draining, add carrot puree to warm pan. Add cheese, and stir to combine. 
  4. Add cooked pasta. Stir well. Can add grated parmesan on top. Enjoy!
