Ingredients
FOR THE SALAD:
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced and cut into quarters
- 1 cup chickpeas
- ½ cup kalamata olives
- ⅓ cup feta cheese
FOR THE DRESSING:
- ½ cup olive oil or avocado oil
- ½ tbsp red wine vinegar
- 1 tsp dijon mustard
- 1 tbsp lemon juice
- ½ tsp dried oregano
- salt & pepper to taste
- ½ tbsp parsley, chopped
Preparation
- In a medium-sized bowl, place the cooked quinoa, halved cherry tomatoes, diced cucumber, chickpeas, kalamata olives, and feta cheese.
- In a small bowl, combine the dressing ingredients. Whisk the dressing.
- Drizzle the dressing all over the Greek quinoa salad. Before serving, you can mix the salad up or leave the ingredients in separate sections.
