Ingredients
- ¼ cup lemon juice
- ¼ cup tahini
- 2 tbsp olive oil
- ½ tsp ground cumin
- 1 can (15 oz) chickpeas, drained & rinsed
- 1 to 3 tbsp water
Preparation
- In a food processor, combine the lemon juice and tahini. Process for a minute, scrape the sides with a spatula, and process it for 30 seconds more.
- Add the olive oil and cumin. Process for 30 seconds, scrape the sides with a spatula, and process it for 30 seconds more.
- Add half of the chickpeas. Process for 1 minute. Scrape the sides with a spatula, and add the other half of the chickpeas. Add 1-3 tbsp of water to thin it out a bit, and process for 1-2 more minutes or until it's the thickness you want.
- Eat plain, or serve with carrots, celery, cucumbers, or crackers. Store in an airtight container in the fridge for up to 7 days. You can also make baked chickpea falafel to go with the hummus!
