Creme Cookie Stuffed Brookies

Ingredients
FOR THE COOKIE DOUGH:
- ½ cup butter, softened
- 6 tbsp granulated sugar
- 6 tbsp brown sugar
- ½ tsp pure vanilla extract
- 1 egg
- 1 cup + 2 tbsp GF all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 6 oz semi-sweet chocolate mini chips
FOR THE BROWNIES:
- 2 eggs
- ½ cup butter, softened
- 1 cup granulated sugar
- ⅓ cup unsweetened cocoa powder
- ½ cup GF all-purpose flour
- 1 tsp pure vanilla extract
- ¼ tsp baking powder
- ¼ tsp salt
FOR THE COOKIES:
- 16 GF chocolate vanilla creme cookies
Preparation
- Preheat oven to 350 degrees. Line 8x8 baking pan with non-stick aluminum foil.
- To make the cookie dough: In a large bowl, combine the butter, granulated sugar, brown sugar, and pure vanilla extract. Add eggs to bowl, and mix together. Add flour, baking soda, and salt to bowl, and mix. Fold in chocolate chips. Note that I used my blondie recipe and cut it in half.
- To make the brownie batter: In a large bowl, combine the butter, sugar, eggs, and vanilla extract. Add in the cocoa powder, flour, salt, and baking powder, and mix well.
- Spoon cookie dough evenly into pan.
- Carefully lay 16 of the cookies in 4 rows and 4 columns. Lightly press the cookies into the cookie dough.
- Spread brownie batter evenly on top of cookies.
- Bake for 35-40 minutes.
