Coffee Cake Mug Cake

Ingredients

FOR THE MUG CAKE:

  • 1 tbsp butter
  • 2 tbsp granulated sugar
  • 2 tbsp applesauce
  • ¼ tsp pure vanilla extract
  • ¼ cup GF all-purpose flour
  • ⅛ tsp baking powder

FOR THE STREUSEL TOPPING:

  • 1 tbsp butter
  • 1 tbsp GF all-purpose flour
  • 1 tbsp brown sugar
  • ¼ tsp cinnamon

Preparation

  1. In a microwave-safe mug, soften the butter in the microwave for about 10-20 seconds. Add granulated sugar, applesauce, pure vanilla extract, flour, and baking powder. Stir together with a spoon. 
  2. In a small bowl, make the streusel by combining the butter, flour, brown sugar, and cinnamon. Do not melt this butter but you can chop it up with a knife so it’s in multiple pieces and easier to mix with other ingredients. It should look lumpy. Put streusel on top of mug cake. 
  3. Microwave for 1 minute. If the streusel is still a little powdery, you can pat it down with a spoon. Continue to microwave at 15 second intervals until you have the consistency you want. Enjoy while warm!
