Ingredients
FOR THE MUG CAKE:
- 1 tbsp butter
- 2 tbsp granulated sugar
- 2 tbsp applesauce
- ¼ tsp pure vanilla extract
- ¼ cup GF all-purpose flour
- ⅛ tsp baking powder
FOR THE STREUSEL TOPPING:
- 1 tbsp butter
- 1 tbsp GF all-purpose flour
- 1 tbsp brown sugar
- ¼ tsp cinnamon
Preparation
- In a microwave-safe mug, soften the butter in the microwave for about 10-20 seconds. Add granulated sugar, applesauce, pure vanilla extract, flour, and baking powder. Stir together with a spoon.
- In a small bowl, make the streusel by combining the butter, flour, brown sugar, and cinnamon. Do not melt this butter but you can chop it up with a knife so it’s in multiple pieces and easier to mix with other ingredients. It should look lumpy. Put streusel on top of mug cake.
- Microwave for 1 minute. If the streusel is still a little powdery, you can pat it down with a spoon. Continue to microwave at 15 second intervals until you have the consistency you want. Enjoy while warm!
