Cinnamon Roll French Toast Sticks

Ingredients
FOR THE FRENCH TOAST STICKS:
- 6-7 slices of Simple Kneads bread
- 3 tbsp brown sugar
- 3 tbsp dairy-free butter, melted
- 2 tbsp cinnamon
FOR THE EGG MIXTURE:
- 3 eggs
- 1 tbsp almond milk
- ½ tsp cinnamon
- ½ tsp vanilla extract
FOR THE ICING:
- 1 cup powdered sugar
- 2 tbsp almond milk
- 2 tbsp dairy-free butter, softened
- ½ tsp vanilla extract
Preparation
- Cut off the crust of each slice. Cut each slice of bread into thirds. Each slice should be about the same size.
- In a small bowl, combine brown sugar, butter, and 2 tbsp of cinnamon. Spread this mixture on half of the slices. Form a sandwich by combining 1 solo slice and 1 slice with spread. You can make about 10 French toast sticks.
- In another bowl, combine eggs, milk, ½ tsp cinnamon, and vanilla extract.
- And in another bowl, combine the powdered sugar, milk, butter, and vanilla extract to make the icing.
- Spray cooking spray or add butter to pan on medium low heat.
- Dip each stick into the egg mixture so they're completely covered. Let each piece soak for about 10 seconds.
- Cook each French toast stick for a few minutes or until both sides are golden brown.
- Drizzle the icing on the French toast sticks. Can also stick the French toast sticks in the icing!
