Chicken Taco Salad with Southwest Ranch Dressing

Ingredients

FOR THE SALAD:

  • 4 oz lettuce (I used fresh spinach)
  • 1 cup cooked chicken, shredded
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • ½ cup beans (I used red beans)
  • ½ cup cheddar cheese, shredded
  • ½ of an avocado, sliced
  • ¼ cup red onion, diced
  • cracked ground pepper

FOR THE SOUTHWEST RANCH DRESSING:

  • 5 tbsp salsa
  • 4 tbsp ranch
  • cracked ground pepper

Preparation

  1. Place lettuce on plate or bowl. Add shredded chicken, corn, tomatoes, black beans, shredded cheddar cheese, avocado, and red onion. Add cracked ground pepper. 
  2. To make salsa ranch or Southwest ranch dressing, mix together the salsa and ranch in a small bowl. Add cracked ground pepper. 
  3. When ready to eat the salad, drizzle the Southwest ranch all over the chicken taco salad. If you want a larger salad, then double or triple the ingredient amounts.
