Chicken Taco Salad with Southwest Ranch Dressing

Ingredients
FOR THE SALAD:
- 4 oz lettuce (I used fresh spinach)
- 1 cup cooked chicken, shredded
- 1 cup corn
- 1 cup cherry tomatoes, halved
- ½ cup beans (I used red beans)
- ½ cup cheddar cheese, shredded
- ½ of an avocado, sliced
- ¼ cup red onion, diced
- cracked ground pepper
FOR THE SOUTHWEST RANCH DRESSING:
- 5 tbsp salsa
- 4 tbsp ranch
- cracked ground pepper
Preparation
- Place lettuce on plate or bowl. Add shredded chicken, corn, tomatoes, black beans, shredded cheddar cheese, avocado, and red onion. Add cracked ground pepper.
- To make salsa ranch or Southwest ranch dressing, mix together the salsa and ranch in a small bowl. Add cracked ground pepper.
- When ready to eat the salad, drizzle the Southwest ranch all over the chicken taco salad. If you want a larger salad, then double or triple the ingredient amounts.
