Ingredients
- 1 cup zoodles (zucchini noodles)
- ½ cup cherry tomatoes, halved
- ½ cup mozzarella perlini (these are extra-small balls of mozzarella)
- basil
- salt & pepper to taste
- balsamic glaze
Preparation
- Prepare zoodles. You can buy already prepared zoodles or use a veggie spiralizer to spiralize 1-2 zucchinis. Drain excess water from zoodles.
- Put zoodles in a bowl, and add salt & pepper.
- Add cherry tomatoes, mozzarella balls, and basil to zoodles.
- Drizzle with balsamic glaze.
