Blueberry Muffins

Ingredients

  • ⅓ cup milk
  • ¼ cup oil
  • 6 oz of Greek yogurt
  • 1 egg
  • 1 ¾ cup GF all-purpose flour
  • ¼ cup granulated sugar
  • 2.5 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup blueberries

Preparation

  1. Heat oven to 400 degrees, and line a 12-cup muffin tin.
  2. In a large bowl, combine milk, oil, Greek yogurt, egg, flour, granulated sugar, baking powder, baking soda, and salt. 
  3. Fold in blueberries.
  4. Divide batter evenly among muffin cups.
  5. Bake for 16-18 minutes.
