Avocado Parmesan Bites

Ingredients
- 1 avocado
- 1 egg
- 1 cup parmesan, shredded or grated
Preparation
- Preheat oven to 450 degrees. Line a baking sheet with parchment paper.
- If the avocado is ripe, mash it up well with a fork. Or you can use a food processor or blender to mash it up.
- In a medium-sized bowl or food processor/blender, combine the mashed avocado, egg, and almost all of the parmesan. Mix together.
- Use a large spoon to make big dollops of the mixture, and place them on the parchment paper-lined baking sheet. Sprinkle the rest of the parmesan on top of the dollops.
- Bake for about 10 minutes. You want the top to be slightly browned and can put a toothpick through one to make sure it comes out clean. Let it cool for a few minutes. Stay any leftovers in an airtight container in fridge for 3 days or freeze them for longer.
