Ingredients
- 1 avocado
- 3 hard-boiled eggs
- 2 tbsp plain or vanilla yogurt
- 1 tbsp chopped green onion (or can use chives, parsley, dill)
- 1 tsp lemon juice
- salt & pepper to taste
- 4 slices of GF bread
Preparation
- Peel & pit the avocado. Peel & chop the hard-boiled eggs.
- In a medium bowl, mash the avocado.
- Add the eggs, yogurt, green onion, and lemon juice to the bowl. Mix until creamy.
- Spread avocado egg salad on GF bread, and make into a sandwich.
