Ingredients
- Beanfield chips (I used ranch & nacho flavors)
- roasted Brussels sprouts
- roasted broccoli
- yellow pepper
- red pepper
- zucchini
- yellow squash
- tomatoes
- spinach leaves
- vegan chipotle mayo
- sriracha
- corn tortillas
Preparation
- Roast the Brussels sprouts and broccoli.
- Lay out 3 corn tortillas and top with spinach leaves.
- Then add Brussels sprouts, broccoli, peppers, zucchini, & yellow squash to the tortillas.
- Top with pieces of chips, and drizzle with vegan chipotle mayo & sriracha.
