Ingredients
- ⅓ cup milk
- ¼ cup oil
- 6 oz of Greek yogurt
- 1 egg
- 1 ¾ cup GF all-purpose flour
- ¼ cup granulated sugar
- 2.5 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup blueberries
Preparation
- Heat oven to 400 degrees, and line a 12-cup muffin tin.
- In a large bowl, combine milk, oil, Greek yogurt, egg, flour, granulated sugar, baking powder, baking soda, and salt.
- Fold in blueberries.
- Divide batter evenly among muffin cups.
- Bake for 16-18 minutes.
