Healthy Banana Oat Cookies

Ingredients
- 2 large bananas
- ⅓ cup apple sauce (I used unsweetened)
- 2 cups GF oats
- 1 tsp pure vanilla extract
- ½ tbsp ground cinnamon
- raisins (optional)
Preparation
- Preheat oven to 350 degrees. Recipe makes about 30 small to medium cookies.
- In a large bowl, mash the bananas completely. Add the apple sauce, and mix together. Add oats, vanilla extract, and cinnamon. If you're adding raisins, add them here. Mix together so the batter is well-combined. I like to put the bowl in the fridge for about 30 minutes so the batter sticks together more.
- Line 2 baking sheets with parchment paper. Add spoonfuls of the batter onto lined baking sheets. Use your hands and/or a spoon to shape the batter into a cookie shape, and then be sure to flatten the cookie since the cookies won't spread while baking.
- Bake for about 15 minutes. Let the cookies cool before removing from the pan. Can store in an airtight container in the fridge for a few days or can freeze them.
