Mozzarella Pesto Tomato Panini

Ingredients
- 4 slices of GF bread (I used GF sourdough bread)
- ¼ cup pesto
- 8 oz fresh mozzarella, sliced
- 1 large tomato, sliced
- salt & pepper to taste
- 1 tbsp butter, softened
Preparation
- Spread a thin layer of pesto on the insides of both pieces of bread. Add fresh mozzarella slices on top of the pesto on 1 slice of bread. Add tomato slices on top of the mozzarella. Sprinkle salt & pepper. Place the remaining slice of bread, pesto side down, on top.
- Preheat cast iron skillet to medium-low heat.
- Spread softened butter to the top and bottom of the sandwich.
- Cook the sandwich on the cast iron skillet for about 3 minutes, and then flip it. You can push down on the sandwich with a spatula. Cook for another 1 to 3 minutes, or until the bread is golden bread and the mozzarella has melted to your desire.
- Repeat with additional slices of bread and toppings.
