Apple Walnut Loaf

Ingredients
FOR THE APPLE MIXTURE:
- 2 apples, peeled & diced (I used Honeycrisp apples)
- ⅓ cup brown sugar
- 1 tbsp lemon juice
- 2 tsp ground cinnamon
FOR THE LOAF:
- ⅔ cup brown sugar
- ½ cup butter, very softened
- 2 eggs
- 1 tsp pure vanilla extract
- 1 ⅓ cups GF all-purpose flour
- ½ cup milk
- 1 tsp baking powder
- ¾ cup walnuts, chopped
Preparation
- Preheat oven to 350 degrees. Line pan with parchment paper. I used a 9x5 loaf pan.
- In a medium-sized bowl, combine the diced apples, ⅓ cup brown sugar, lemon juice, and ground cinnamon. Mix together with a spoon. Set aside.
- In a large bowl, combine ⅔ cup brown sugar and butter. Add eggs and pure vanilla extract, and mix well. Add flour, milk, and baking powder, and mix until just combined. Fold in almost all of the chopped walnuts - the rest will be used on top of the loaf.
- Pour half of the batter evenly into the pan. Then add half of the apple mixture evenly on top of the batter. Pour the rest of the batter evenly on top of the apple mixture. Add the rest of the apple mixture evenly on top of the batter. Sprinkle the rest of the chopped walnuts on top.
- Bake for 60-65 minutes or until a knife/toothpick goes through cleanly.
